Chicken Cheddar Quinoa Romaine Roasted Chickpeas Cucumber Tomatoes Carrot Honey & Mustard Dressing
Why it’s the nuts
Chickpeas – these are a great source of fibre, both types – soluble and insoluble fibre. Soluble fibre forms a gel-like substance in the digestive tract, which helps to trap dietary cholesterol and move it out of the body. Insoluble fibre is the roughage that helps to bulk and help the transit of digested food through the digestive tract so both types are very important.
Tomatoes – containing lycopene, a phytochemical that is thought to help the body neutralise the damaging effects of UV rays and offer some protection to the skin. Remember to eat them up this summer!
Cucumber – another food that’s great for summer, cucumbers have a high water content so they’re ideal to help hydrate during the sunnier seasons.
It also tastes delicious with an added scoop of avocado mash!
