Why it’s the nuts
Lentils – a source of protein for vegetarians and vegans but also a rich source of vitamin B1 to help maintain the proper functioning of the nervous system.
Red Cabbage – we love red cabbage for its deliciously bright hue, which indicates that it’s also rich in antioxidants. In addition, it contains at least twice the amount of vitamin C compared to other varieties in the cabbage family – read bright, glowing skin and a solid immune system!
Spices – Our vegetable curry contains a number of spices such a cumin, coriander and curry powder. Spices are power houses of nutrients and essential oils that are made from the bark, root, bud or berry of a plant. Generally speaking they have powerful antioxidant abilities and many are believed to help digestive health among many other useful health properties.
